First Fall spinach harvest, 0.75 lbs.

 

Matador (Spinacia oleracea) is the best spinach variety, hands down. The leaves are huge, it’s very cold-resistant and also slow to bolt in Spring, with a good robust body, crunch and flavor.

 

Spinach rotates into potato boxes after they’ve been harvested, along with bunching onions. We’re still pretty good on sunlight, but soon enough I’ll hook on the supplemental LED lights and eventually clear plastic when it gets quite cold. Enables harvesting of fresh spinach all winter.
